8/52 Classic Tiramisu

Next up on our 52-weeks-challenge about Italian cooking is classic Tiramisu! Finally a dessert/something sweet! I was overly excited to try this because for one thing I love desserts. I don't love all desserts, I can be quite picky in fact (I still love desserts!), but I definitely love Tiramisu! It has just the perfect combination of sweet cream, coffee and cocoa and goes really well with a cup of strong coffee. Tiramisu is of course a recipe I can't withhold from you!

 

Classic Tiramisu

 (easy, 40 minutes plus 4 hours cooling, makes 4 servings)

Ingredients
1 1/4 cups cold espresso or very strong coffee
1/6 cup Cognac
4 egg yolks
6 tablespoons white sugar
2 egg whites
18 oz Mascarpone cheese
7 oz Ladyfingers
cocoa powder

Beat egg yolks and sugar until foamy and fold in the Mascarpone cheese by the spoonful. Beat the egg whites until stiff and fold in as well.

Mix cold espresso and cognac. Dip half of the ladyfingers into the mixture and immediately place them next to each other in a rectangular form. Spread half of the Mascarpone cream on top and repeat with a second layer of dipped ladyfingers and Mascarpone cream.Cover with cling film and allow to cool for at least 4 hours in the refrigerator.

Before serving sprinkle a thick layer of cocoa powder on top. Enjoy with fresh fruit and a nice cup of coffee.
